Ground Pork Al Pastor Tacos with Pineapple Salsa

Ingredienser

1 lb. ground pork*

2 garlic cloves, minced

2 tsp chili powder

1 tsp garlic powder

1½ tsp dried oregano

1½ tsp cumin

½ tsp salt

2 Tbsp chipotle sauce (from a can of chipotle peppers in adobo)

2 Tbsp lime juice

1 Tbsp white vinegar

Corn tortillas, warmed for serving

Mashed avocado or guacamole

Lime wedges, for serving

Shredded lettuce or cabbage (optional)

Cotija cheese, crumbled (optional)

1½ cups fresh pineapple, diced

⅓ cup red onion, finely diced

1 large jalapeño, deseeded & finely chopped

¼ cup chopped cilantro

½-1 lime, juiced (or to taste)

Fremgangsmåte

Make the pineapple salsa. Add the diced pineapple, red onion, jalapeño and cilantro to a bowl and squeeze your lime over the top. Toss until the salsa fully coated then taste and adjust the lime juice if needed.Cover and keep it chilled in the refrigerator while you prepare the tacos.

Mix the seasonings. Combine the chili powder, garlic powder, cumin, dried oregano and salt together in a small bowl and set it aside.

Cook the pork. Heat a splash of olive oil in a large sauté pan over medium-high heat.Once hot, add the ground pork and garlic and cook until the pork is cooked through and there's little to no liquid left in the pan. (Use a spatula to break up the pork as it cooks.)Turn the burner down to medium, add the seasonings and stir until the pork is fully coated in the spices. Add the chipotle sauce, lime juice and white vinegar. Stir again until fully coated then transfer the pork to a serving bowl once done.

Assemble & serve. Layer each tortilla with mashed avocado, a spoonful of Al pastor pork, pineapple salsa and any other preferred toppings.Serve immediately with fresh lime wedges.
