Skirt Steak Marinade

3 lbs skirt steak
Oil (to coat, canola or other high smoke point oil)
1 tbsp kosher salt
1 tbsp coarse ground black pepper
1 tbsp chipotle pepper in adobe (liquid, and/or finely chopped)
1 tbsp (jarred) garlic
1 lime, juiced

Marinade
Lay the steak out on a pan or other large flat bottomed container, and add enough oil to the steak to coat it. Salt the steak generously, but do not over salt (you may not need the entire tbsp for 3lbs of steak, it it's a good starting point). Then apply pepper, being sure to evenly cover all sides. Apply the chipotle (either use the liquid if you have enough, or finely chop the peppers before applying to the steak), then garlic, then lime.
Cover and refrigerate for 4hrs, up to overnight.
Grill over very high, direct heat.
