6 eggs

Dice Peppers
Slice Zucchini into thin discs, the cut discs into strips
COOK
Heat olive oil in pan on Med-Hi heat. Add in diced Veggies and cook until soft. Usually 10 to 15 minutes
Next add Minced Garlic and spices. Cook for 2 minutes or until fragerant
Next add in tomatos, place lid on pan and let cook for 15 mins. Then, crush and reduce tomatoes in pan. They should be soft at this point. If not, cook until soft.
Create six wells with a spoon and crack an egg in each well. Turn heat to low and put lid back on to let eggs cook while it simmers.
Finally, when eggs are cooked, turn off hear and put fresh parsely and feta crumbles on top.
