Plantain Waffle & Lion’s Mane Bites

Ingredienser

For Waffle

2 very ripe plantain

For lions mane bites

1 large lions mane mushroom

Wet batter

1/4 cup tbs ground flax seed

2/3 cup water

1 tbs mustard

1/4 cup hot sauce

Dry batter

1 1/2 cup chickpea flour

1 tsp Salt

1 tsp Pepper

1 tsp Garlic Powder

1 tsp Onion Powder

1 tsp Dried Thyme

Quick Sweet Chili Sauce

1 tbs chili crisp/oil

3 tbs avocado oil

1 ½ tbs lemon juice

2 tbs agave/maple syrup

Fremgangsmåte

For waffle start by peeling plantain and cutting into halves. Fry these on medium heat until golden and cooked through, the riper the better. Let cool for 5 mins on paper towel lined tray. Then lay them in a waffle iron, press flat and cook for about 5 mins or until it release easily from iron and is slightly crisp/holds shape. Set aside. For mushroom, chop your lions mane into small chunks then dredge once each in wet then dry batter and fry for 5-7 mins on med-hi heat in avocado oil until crisp all around. Set aside, meanwhile combine all sauce ingredients in a mixing bowl then stir and add mushrooms and toss to coat. Assemble and enjoy
