Ingredienser

  • 1 tablespoon brown sugar

  • ¼ cup diced shallot

  • 1 tablespoon minced garlic

  • ¼ cup chopped green onions

  • 3 tablespoon fish sauce

  • 1 tablespoon coconut sauce

  • Splash of coconut soda

  • ½ t black pepper

Fremgangsmåte

  1. Heat oil over med heat.

  2. Pan fry all sides of the fish for a min on each side then remove it.

  3. Add coconut sauce (or make your own - which is essentially equal parts oil and sugar, let it caramelize then go to next step)

  4. Saute shallot, garlic, and whites of green onion.

  5. Add in the fish.

  6. Add coconut soda/water and fish sauce

  7. Bring to a boil, let it boil for a couple minutes, then bring to medium-low heat, and simmer until the sauce is reduced and fish is cooked.

  8. Add pepper and greens of green onions to finish
