Veggie Pasta With Beans

Ingredienser

1 cup pasta boiled

2 tbl EVO

6 cloves garlic sliced

1 cup cherry or grape tomatoes cut in half

1/2 of 6 oz pk baby spinach

1 tbl chicken or veggie broth concentrate

1 can cannellini beans drained

Salt & pepper to taste

Parmesean cheese

Fremgangsmåte

Cook pasta and save 1 cup pasta and water

Heat oil, add garlic, then tomatoes. Cook 1 minute. Add spinach, broth concentrate, pasta water and beans. Cook about 2 minutes till spinach wilts. Add pasta, stir and sprinkle parmesean cheese.

Notater

Instead of cherry tomatoes you can use a 15 oz can of diced tomatoes. I add the whole bag of baby spinach.
