Creamy Garlic Chicken Mushroom Pasta

250 g (9 oz) pasta (fettuccine, penne, or spaghetti)
2 chicken breasts (sliced into strips)
250 g (9 oz) mushrooms (button or cremini, sliced)
3 cloves garlic, minced
2 tbsp olive oil
2 tbsp butter
1 cup (240 ml) heavy cream
½ cup (120 ml) chicken broth
½ cup grated Parmesan cheese
Salt and black pepper to taste
½ tsp chili flakes (optional)
Fresh parsley for garnish

Cook the pasta:
Boil in salted water according to package directions.
Reserve ½ cup of pasta water, then drain and set aside.
Cook the chicken:
Season chicken with salt and pepper.
In a large skillet, heat olive oil and 1 tbsp butter over medium-high heat.
Add chicken and cook until golden and cooked through (about 5–6 minutes).
Remove and set aside.
Sauté mushrooms and garlic:
In the same skillet, melt remaining butter.
Add mushrooms and cook 4–5 minutes until golden brown.
Add garlic and cook 1 minute until fragrant.
Make the creamy sauce:
Pour in chicken broth and heavy cream.
Stir in Parmesan cheese and simmer 2–3 minutes until the sauce thickens slightly.
Add salt, pepper, and chili flakes if using.
Combine everything:
Add cooked pasta and chicken back into the pan.
Toss well to coat in sauce.
If the sauce is too thick, stir in a splash of reserved pasta water.
Serve:
Garnish with chopped parsley and extra Parmesan.
