The perfect healthy breakfast to keep you fit and full of protein all day! You've got potatoes, eggs, cheese, and peppers!!!

1 -2 tablespoons olive oil
1 small potato
2-3 eggs
2-3 tablespoons cheddar cheese
1/2 jalapeño slices
Salt and pepper
Add olive oil to a a pan on medium.
Using a potato peeler slice about a half a potato enough slices to cover the base of the pan.
Sprinkle salt and pepper and on low heat let the potatoes cook about 2 minutes.
You can flip the potatoes or leave them as is and then crack, two or three eggs and slightly scrambled and add salt and pepper. - you can also scramble the eggs in a bowl with salt and pepper, and pour them directly over the potatoes.
Add salt and pepper, jalapeño and cheese to the eggs you can cover with a lid to help cook the eggs.
You can flip the eggs over or serve as is with toast.
