Quinoa Salad So Good It Almost Makes You Forget It’s Healthy

Ingredienser

For the salad:

3 tablespoons extra-virgin olive oil

1 ½ cups (about 300 grams) white quinoa

3 cups (750 ml) room-temperature water

3 small cucumbers, diced

1 branch green onions, diced

1 (400-gram) can chickpeas, rinsed well and drained

Handful parsley, chopped

150 grams feta cheese, crumbled

¾ cup (120 grams) pitted green or black olives, sliced

For the dressing:

⅔ cup (165 ml) extra-virgin olive oil

⅓ cup (75 ml) fresh lemon juice

1 tablespoon salt

Fremgangsmåte

Heat the oil in a deep pot on medium-high heat. Add the quinoa and stir well. Add the water and stir once more. Cover the pot and bring to a boil, watching it closely so it doesn’t bubble over. Reduce the heat to simmer and cook, covered, until all the liquid is absorbed, about 15 to 20 minutes. Transfer to a large serving bowl and let cool.

In a separate bowl, combine the cucumbers, green onions, chickpeas, parsley, feta cheese and olives. Add this to the cooled quinoa.

Make the dressing: In a mixing cup, whisk the oil, lemon juice and salt together. Pour the dressing over the salad. Toss to mix.
