2 tbsp (30 g) ricotta cheese

1 egg

2 tbsp (16 g) oat flour or almond flour

1 tbsp (15 ml) maple syrup or honey

1 tsp lemon zest

½ tsp baking powder

Optional: extra lemon zest or powdered sugar for topping

Step 1: Mix the Batter

In a microwave-safe mug, whisk together the blended cottage cheese, ricotta, and egg until smooth.

Step 2: Add Dry Ingredients

Stir in the oat flour (or almond flour), maple syrup or honey, lemon zest, and baking powder. Mix until fully combined and lump-free.

Step 3: Microwave

Microwave on high for 60–90 seconds, or until the cake is set in the center. (Cooking time may vary slightly depending on your microwave.)

Step 4: Cool & Finish

Let it cool for 1–2 minutes. Top with extra lemon zest or a light dusting of powdered sugar if desired.
