Paprika Beef Stroganoff Shells

12 oz medium pasta shells
1 lb beef sirloin or ground beef
Salt & black pepper, to taste
1 tsp smoked paprika
1 tsp garlic powder
1 tbsp olive oil
1 tbsp butter
1 small onion, diced
2 cups sliced mushrooms
3 cloves garlic, minced
1 tsp Worcestershire sauce
1 cup beef broth
¾ cup sour cream
½ cup heavy cream
1 tsp Dijon mustard
Optional: fresh parsley for garnish

Cook pasta shells according to package directions. Drain and set aside.
Season beef with salt, pepper, paprika, and garlic powder.
In a large skillet, heat olive oil over medium-high heat. Add beef and sear until browned. Remove and set aside.
In the same skillet, melt butter. Sauté onions and mushrooms for 5–6 minutes until soft.
Add garlic and cook for 1 minute. Stir in Worcestershire sauce, beef broth, and Dijon mustard. Simmer 2–3 minutes.
Reduce heat to low. Stir in sour cream and heavy cream until smooth and creamy.
Return beef and cooked shells to the skillet. Toss to coat in the stroganoff sauce.
Garnish with parsley and serve hot.
