Cowboy Creamy Chicken Linguine with Sweet Bell Peppers

12 oz linguine pasta
1 lb boneless skinless chicken breast, sliced into strips
Salt & black pepper, to taste
1 tsp garlic powder
1 tsp smoked paprika
1 tbsp olive oil
5 tbsp unsalted butter
4 cloves garlic, minced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
½ tsp red pepper flakes (optional)
1 tbsp lemon juice
1 cup heavy cream
¾ cup grated Parmesan cheese
1 tsp Dijon mustard
1 tsp Italian seasoning
1 tbsp fresh chopped parsley (plus more for garnish)

Cook the Pasta:
Boil linguine in salted water until al dente. Drain and set aside.
Sear the Chicken:
Season chicken with salt, pepper, garlic powder, and smoked paprika.
Heat olive oil in a large skillet over medium-high heat.
Cook chicken until golden and fully cooked, about 6–7 minutes. Remove and set aside.
Sauté the Peppers & Garlic:
In the same skillet, melt butter.
Add minced garlic, bell peppers, and red pepper flakes (if using).
Sauté 3–4 minutes until tender and fragrant.
Build the Sauce:
Stir in lemon juice, Dijon mustard, Italian seasoning, and heavy cream.
Simmer 3–4 minutes, then stir in Parmesan until melted and creamy.
Toss and Serve:
Add cooked linguine and chicken back into the skillet. Toss everything to coat in the sauce.
Sprinkle with fresh parsley and serve hot.
