Chili Cheese Tater Tot Casserole

1 lb ground beef

1 small onion, diced

1 can (15 oz) chili beans

1 can (10 oz) diced tomatoes with green chilies (like Rotel)

1 can (15 oz) tomato sauce

2 teaspoons chili powder

1/2 teaspoon cumin

Salt and pepper, to taste

3 cups frozen tater tots

2 cups shredded cheddar cheese

Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray.

In a large skillet over medium heat, cook ground beef and onion until beef is browned. Drain excess fat.

Stir in chili beans, diced tomatoes, tomato sauce, chili powder, cumin, salt, and pepper. Simmer for 5 minutes.

Pour chili mixture into prepared baking dish and spread evenly.

Arrange tater tots in a single layer over the chili.

Bake uncovered for 25 minutes.

Remove from oven, sprinkle cheddar cheese over tots, and bake for another 10 minutes until cheese is melted and bubbly.

Let rest 5 minutes before serving.
