If you’re looking for a high-protein dinner recipe that feels cozy, savory, and impressive without spending all night in the kitchen, this one’s for you. This mustard roasted chicken takes under 10 minutes of prep, bakes up crispy on the outside, juicy on the inside, and is absolutely bursting with bold, savory flavor.

1 whole chicken, spatchcocked
2 Tbs olive oil
3 tsp sea salt
1/4 c Dijon mustard
1 lemon, sliced
1 bunch of fresh thyme
1 bunch of fresh rosemary
1/4 c butter, melted
1/4 c raw honey
1/3 c whole grain mustard
Coat a baking sheet in olive oil so they roasted chicken won’t stick then lay the chicken flat on the pan, breast side up. Pat the skin dry with a paper towel to make it extra crispy and then sprinkle the sea salt over the chicken. Next, brush the Dijon over all of the skin making sure each area is covered. Add the lemons around the base of the chicken and dress the meat with the fresh herbs along the outside and across the top. Pour the melted butter over the meat until the entire skin is covered and glistening.

Place in the oven at 400 degrees for 50 minutes. Then, increase the temperature to 425 for another 20-25 minutes or until the internal temperature of the meat is 165. Remove from the oven and let the chicken rest on the pan for about 10 minutes before glazing with the honey mustard mixtures and cutting into portions for serving. I like to reserve a few tablespoons of the glaze as a dipping sauce as well.
