1 cup fine cornmeal (120 g) •
1 cup all-purpose flour (125 g) •
1 tsp baking powder •
½ tsp baking soda •
⅛ tsp salt •
½ cup unsalted butter, melted (113 g / 8 Tbsp) •
⅓ cup packed brown sugar (67 g) •
2 Tbsp honey (30 mL) •
1 large egg, room temp •
¾ cup Greek yogurt (180 g) •
½ cup buttermilk (120 mL)
Fremgangsmåte
1 Preheat oven to 400°F (204°C). Grease and lightly flour a 9-inch (23 cm) square pan.
2 In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, and salt.
3 In another bowl, whisk melted butter, brown sugar, and honey until smooth. Add egg, then stir in yogurt and buttermilk.
4 Combine wet and dry ingredients — mix just until blended (no over-mixing unless you like tough bread 😅).
5 Pour into the prepared pan and bake for 20 minutes, or until golden and a toothpick comes out clean.
6 Cool slightly, then serve warm with butter, honey, or alongside that Braised Short Rib Stew with Greens you just made 😮💨
