Arugula, white bean, and feta salad

Ingredienser

1- 15.5-oz can Cannellini Beans

4 oz Grape Tomatoes

2 oz Arugula

1 lemon

2 cloves garlic

1 bunch oregano

1 ½ oz Feta Cheese

½ cup Tzatziki (cucumber-yogurt sauce)

Fremgangsmåte

1. Prepare the ingredients & start the salad

… Wash and dry the fresh produce.

… Drain and rinse the beans.

… Halve the tomatoes.

… Roughly chop the olives.

… Pick the oregano leaves off the stems; roughly chop the leaves.

… Peel 1 clove of garlic; using a zester or the small side of a box grater, finely grate into a paste.

… Halve the lemon(s) crosswise; squeeze the juice into a large bowl, straining out the seeds. Whisk in 2 tablespoons of olive oil and as much of the garlic paste as you'd like; season with salt and pepper. Add the drained beans, halved tomatoes, chopped olives, and chopped oregano. Stir to thoroughly combine.

2. Finish the salad & serve your dish

… Add the arugula to the bowl of dressed beans and tomatoes; toss to combine.

… Taste, then season with salt and pepper if desired.

… Serve the salad topped with the cooked fish, feta (crumbling before adding), and tzatziki.
