Velvety Garlic Beef & Potato Skillet

1 lb ground beef
4 cups thinly sliced Yukon gold or russet potatoes
1 small onion, diced
4 cloves garlic, minced
1 tsp garlic powder
½ tsp smoked paprika
Salt & black pepper, to taste
2 tbsp olive oil or butter
¾ cup beef broth
¾ cup heavy cream
1 cup shredded cheddar cheese (optional but delicious)
Fresh chopped parsley or green onions, for garnish

Sear the Beef:
In a large deep skillet, heat olive oil or butter over medium-high heat.
Add ground beef and diced onion. Season with salt, pepper, garlic powder, and paprika.
Cook until beef is browned and crumbled, about 6–8 minutes. Remove and set aside.
Cook the Potatoes:
In the same skillet, add a little more oil if needed.
Add sliced potatoes and sauté for 2–3 minutes.
Pour in beef broth, cover, and simmer for 10–12 minutes, stirring occasionally, until potatoes are fork-tender.
Make It Velvety:
Reduce heat to low. Stir in minced garlic and cook for 1 minute until fragrant.
Add heavy cream and return the beef to the skillet. Stir everything together gently.
Optional Cheesy Finish:
Sprinkle in shredded cheddar and stir until melted and creamy (optional, but adds richness).
Serve:
Top with fresh parsley or green onions. Serve straight from the skillet for a rustic, comforting meal.
