Mango Black Bean Shrimp Salad

Ingredienser

Salad:

  • 2 mango

  • 1 can black beans drained and rinsed

  • 1 can corn

  • 1 red bell pepper

  • 1/2 red onion

  • ¼ cup cilantro

  • 1 large jalapeño

  • Avocado

Shrimp:

  • Shrimp: de shelled, deveined, and cut in half

  • lime juice

  • Chile powder or tajin

  • Salt

  • Pepper

Dressing:

  • lime

  • olive oil

  • maple syrup or honey

  • Salt

  • Pepper

  • Chile powder or tajin

  • Cumin

Fremgangsmåte

  1. Pan fry dry shrimp with a squeeze of lime, chile powder (or tajin), salt and pepper. Let cool

  2. Chop veg

  3. mix dressing

  4. Mix everything together
