Taco Chicken and Black Bean Skillet

Ingredienser

Ingredients:

1/2 cup diced onion

1 cup diced bell peppers

2 boneless, skinless chicken breasts, cubed

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 packet taco seasoning

1 tosp olive oil

1/2 cup shredded cheese (cheddar or Mexican blend)

1/4 cup chopped fresh cilantro

1 lime, cut into wedges

Fremgangsmåte

Instructions:

1. Heat olive oil in a large skillet over medium heat.

2. Add diced onion and bell peppers, sauté for 3-4 minutes until softened.

3. Add cubed chicken to the skillet and cook until no longer pink, about 5-6 minutes.

4. Sprinkle taco seasoning over the chicken and vegetables, stirring to coat evenly.

5. Add black beans and corn to the skillet, stirring to combine. Cook for another 3-4 minutes.

6. Reduce heat to low and sprinkle shredded cheese on top. Cover the skillet for 2 minutes to let the cheese melt.

7. Remove from heat and garnish with chopped cilantro.

8. Serve hot with lime wedges on the side.
