Skillet Beef Stroganoff

1 lb beef sirloin or stew meat, thinly sliced
Salt and black pepper, to taste
1 tbsp olive oil
1 tbsp butter
1 small onion, chopped
2 cloves garlic, minced
8 oz mushrooms, sliced
1 tsp paprika
1 tbsp Worcestershire sauce
1 1/2 cups beef broth
1 tbsp cornstarch mixed with 2 tbsp cold water
1/2 cup sour cream
8 oz egg noodles, cooked
Fresh parsley, for garnish (optional)

Season the sliced beef with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Sear the beef in batches until browned, then remove and set aside.
In the same skillet, add butter, onion, and mushrooms. Sauté for 5–6 minutes until softened and golden.
Stir in garlic, paprika, and Worcestershire sauce. Cook for 1 minute.
Pour in the beef broth and bring to a simmer. Stir in the cornstarch slurry and cook for 2–3 minutes until slightly thickened.
Lower the heat and stir in sour cream until smooth. Return the beef to the skillet and simmer for another 2–3 minutes.
Add cooked egg noodles and toss gently to coat in the sauce.
Serve warm, garnished with fresh parsley if desired.
