High Protein Shakshouka

Ingredienser

Recipe (1 serving):

50g onion

50g peppers

150g tomatoes

3 eggs

50g 0% Greek yoghurt

20g feta cheese

50g butter beans

1 tbsp tomato paste

1 tsp paprika, 1 tsp cumin, pinch of salt and pepper

150ml water

Coriander

Optional: hot sauce

Fremgangsmåte

Add the onion, peppers and tomatoes to a pan with a light spray of oil. Mix, cover and cook for 3–4 minutes until softened.

Add the tomato paste, spices, butter beans and 150ml water to create a sauce. Stir, cover and cook for a further 3 minutes.

Uncover, create two small wells in the sauce and crack in your eggs. Cook for 4–6 minutes, depending on how runny you like your eggs.

Add the Greek yoghurt around the edges of the pan, then top with feta cheese.

Optional: add hot sauce and serve.
