For the Bowl
2 boneless, skinless chicken breasts, cut into bite-sized pieces
2 medium sweet potatoes, diced
1 cup cooked brown rice
2 cups chopped kale (lightly sautéed or massaged)
1 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
Salt & pepper to taste
Creamy Garlic Yogurt Sauce
½ cup plain Greek yogurt
1 tbsp lemon juice
1 tsp garlic powder
Salt & pepper to taste
Splash of water to thin

Preheat oven to 400°F. Toss sweet potatoes with olive oil and seasonings. Roast 20–25 minutes until tender and caramelized.
Season chicken with garlic powder, paprika, salt, and pepper. Cook in a skillet over medium-high heat until golden and cooked through.
Whisk together all dressing ingredients until smooth.
Build your bowls with brown rice, kale, roasted sweet potatoes, and chicken. Drizzle generously with the creamy garlic sauce.
