Rotel Pasta Fiesta

12 oz rigatoni or penne pasta
1 lb ground beef or ground turkey
1 tbsp olive oil
1 can (10 oz) Rotel (diced tomatoes with green chilies)
1 cup heavy cream or half-and-half
1 cup shredded cheddar or Mexican blend cheese
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp Salt
1/8 tsp black pepper
parsley for garnish (optional)

Cook the Pasta: Boil pasta in salted water until al dente. Drain and set aside.
In a large skillet, heat olive oil. Cook ground beef until browned. Drain excess fat.
Stir in the can of Rotel, garlic powder, onion powder, salt, and pepper. Simmer for 2-3 minutes.
Pour in the cream and stir. Bring to a light simmer.
Stir in shredded cheese until melted and the sauce is smooth and creamy.
Add cooked pasta to the skillet. Stir until well combined and heated through.
Garnish with parsley if desired
