Southern Creamy Mushroom Rice

1 cup long-grain white rice
2 tbsp olive oil
2 tbsp unsalted butter
8 oz mushrooms, sliced (button or cremini work great)
1 small onion, finely diced
3 cloves garlic, minced
2 cups chicken broth (or vegetable broth)
½ cup heavy cream
½ tsp dried thyme
½ tsp garlic powder
Salt & black pepper, to taste
½ cup shredded cheddar or mozzarella (optional for extra creaminess)
2 tbsp chopped fresh parsley (for garnish)

Sauté the Mushrooms:
Heat olive oil and butter in a large skillet or Dutch oven over medium heat.
Add sliced mushrooms and cook for 5–6 minutes until browned and softened.
Stir in the diced onion and garlic, and cook another 2–3 minutes until fragrant.
Simmer the Rice:
Add the rice to the skillet. Stir to coat with the mushroom mixture.
Pour in chicken broth, then stir in thyme, garlic powder, salt, and pepper.
Bring to a boil, then reduce heat to low. Cover and simmer for 15–18 minutes, or until the rice is tender and liquid is absorbed.
Make It Creamy:
Once the rice is cooked, stir in the heavy cream and cheese (if using).
Let it cook uncovered for 2–3 more minutes until creamy and thickened.
Serve It Up:
Garnish with chopped fresh parsley and serve hot as a comforting main or hearty side.
