Creamy Cottage Cheese Banana Pancake Bites – Fluffy & Protei

½ cup cottage cheese

1 ripe banana, mashed

1 large egg

½ cup oat flour (or blended oats)

½ tsp baking powder

½ tsp vanilla extract

¼ tsp cinnamon

1 tbsp honey or maple syrup (optional)

Pinch of salt

1 tbsp melted butter (for cooking)

Blend the Batter: In a blender, combine cottage cheese, banana, egg, oat flour, baking powder, vanilla, cinnamon, and salt. Blend until smooth.

Preheat the Pan: Heat a non-stick skillet or griddle over medium-low heat and grease with butter.

Cook the Bites: Spoon small amounts of batter onto the pan to form mini pancakes. Cook for about 1-2 minutes per side until golden brown and cooked through.
