Creamy Cowboy Chicken Linguine with Herb Butter

12 oz linguine pasta
1 lb boneless skinless chicken breast, sliced
Salt & black pepper, to taste
1 tsp garlic powder
1 tsp smoked paprika
½ tsp red pepper flakes (optional for heat)
2 tbsp olive oil
4 tbsp unsalted butter
4 cloves garlic, minced
1 tsp Dijon mustard
1 tsp Italian seasoning
½ cup chicken broth
1 cup heavy cream
¾ cup grated Parmesan cheese
1 tbsp chopped fresh parsley (plus more for garnish)

Cook the Linguine:
Boil linguine according to package instructions. Drain and set aside.
Sear the Chicken:
Season chicken with salt, pepper, garlic powder, paprika, and red pepper flakes (if using).
In a large skillet, heat olive oil over medium-high heat. Sear chicken until golden and cooked through, about 6–7 minutes. Remove and set aside.
Build the Cowboy Herb Butter Sauce:
In the same skillet, melt butter over medium heat. Add minced garlic and sauté 1 minute until fragrant.
Stir in Dijon mustard and Italian seasoning. Cook for 1 more minute.
Make It Creamy:
Pour in chicken broth and heavy cream. Simmer for 3–4 minutes until slightly thickened.
Stir in Parmesan cheese until smooth and creamy.
Bring It All Together:
Add cooked linguine and chicken back into the skillet. Toss everything until coated in the creamy herb butter sauce.
Finish & Serve:
Sprinkle with fresh parsley and more Parmesan if desired. Serve hot.
