High-protein Almond Croissant Baked Oats

All the cosy, buttery almond croissant vibes… in a high-protein baked oats moment 💪

Soft, fluffy oats topped with a creamy almond layer and crunchy flaked almonds — perfect for slow mornings or meal-prep wins.

Oat base 🥣

2 cups oats

¼ cup almond flour

¼ cup hemp seeds

⅔ cup vanilla or plain protein powder

½ tsp baking powder

1 tsp almond extract

Pinch of salt

1 banana, mashed

1¼ cups almond milk

Almond topping 🥄

⅓ cup almond butter

2 tbsp honey or maple syrup

1 egg

¼ cup almond flour

1 tsp almond extract

To finish ✨

¼ cup flaked almonds

Fremgangsmåte

Preheat oven to 180°C and mix all oat base ingredients in a 6×6 baking dish

Whisk topping ingredients until smooth, spoon over oats + sprinkle almonds

Bake 30–35 mins until golden

Let cool slightly, slice into 4, reheat to serve and top with Greek yoghurt.
