INGREDIENTS

• 3 tbsp oil • 1~3lbs chuck roast roll

Spice Rub: • 1 tbsp cumin (optional) • 1 tbsp paprika • 1 tsp cinnamon • 1 tsp garlic powder • 1 tsp onion flakes • 2 tsp salt • 1 tbsp brown sugar

• 3 onions, peeled and sliced • 4 cloves garlic, peeled and sliced • 1 cup dry red wine • 1 cup pomegranate juice • 1/2 cup silan • 3 tbsp tomato paste

Fremgangsmåte

DIRECTIONS

1. Combine spice rub ingredients. Rub over meat, reserving remainder for later.

2. Heat a large pan over medium-high heat. Once hot, add oil.

3. Sear meat on all sides.

4. In the meantime, preheat oven to 300°F.

5. Place onions and garlic in a roasting pan.

6. Top with remaining spice blend and seared roast.

7. Pour wine, pomegranate juice, silan and tomato paste around the roast.

8. Cover tightly with 2 layers of foil.

9. Roast for about 4-5 hours, basting occasionally. 10. Slice once cooled completely.
