Beets Winter Salad

A few large beets, scrubbed clean and chopped into chunky bite size pieces

1 to 2 cans lentils, drained and rinsed

1 large bunch flat parsley, roughly chopped

1 bunch fresh mint, roughly chopped

1 cup walnuts

200g feta, crumbled

Olive oil

Salt

Pepper

Honey

Chilli flakes

Za’atar

For the dressing, shake really well:

4 tbsp extra virgin olive oil

2 tbsp apple cider or red wine vinegar

2 tbsp pomegranate molasses

Sea salt to taste

Generous drizzle of honey

taste it to make adjustments, should be thick, sweet, sour and salty

Arahan

Preheat oven to 200 fan

Place walnuts in an oven proof dish and roast for about 10 to 12 mins or until golden and fragrant

Spread the beets onto a lined baking tray and coat well in olive oil, salt, chilli flakes (I used a lot) and a big drizzle of honey. Mix to coat well and roast for about 45 minutes or until caramelised

Throw the herbs into a bowl along with the lentils, feta, crunchy walnuts broken up and the dressing.

Toss really well so that it’s all super well coated and then add the beets once they’ve cooled a little

Throw in about a tbsp of za’atar before mixing again with the beets then plate up and enjoy
