For the carrots:
1 pound carrots, washed/trimmed/sliced lengthwise down the middle and into 2 inch pieces
2 1/2 tbsp unsalted butter
1/2 cup grated parmesan cheese
1 tsp salt
1 tsp oregano
1/2 tsp garlic powder
1/2 tsp pepper
1/2 tbsp olive oil, plus extra for
the top
For the honey-mustard:
1/2 cup Greek yogurt
2 tbsp honey mustard
1 tbsp hot sauce
Toppings:
Fresh parsley

Preheat the oven to 425. While the oven preheats, add the butter to a casserole dish and place in the oven to melt.
2️⃣Make the parmesan mixture. Add the Parmesan cheese, salt, oregano, garlic powder and pepper to a small bowl. Mix to combine. Set aside.
3️⃣Remove the dish from the oven, add the parmesan mixture and the 1/2 tbsp olive oil to the dish, mix to form a paste with the butter and spread evenly. Place the carrots face down over the mixture. Drizzle the tops with olive oil and place in the oven for 25-30 minutes, until carrots are tender.
4️⃣While the carrots are roasting, make the honey mustard dip. Add the Greek yogurt, honey mustard and hot sauce to a small bowl. Mix to combine and set aside.
5️⃣Remove the carrots from the oven, allow to set for a few minutes, then use a spatula to remove carrots from the dish and onto a plate. Top with fresh parsley and serve with the dip.
