Homemade Garden Tomato pizza sauce

8 large fresh tomatoes, cored
1 small sweet onion, chopped
1 clove garlic, minced
1 tablespoon dried oregano (reduced from original 2 Tbsp)
4 leaves fresh basil, chopped
1½ teaspoons salt (½ tsp original + the ~1 tsp you added)
Freshly ground black pepper, to taste
2–3 tablespoons tomato paste
1 teaspoon sugar, plus more to taste

Bring a large pot of water to a boil. Add the cored tomatoes and boil for about 30 seconds, until the skins begin to curl.
Transfer tomatoes immediately to an ice-water bath. Cool for 1–2 minutes.
Peel and discard the skins. Transfer the tomatoes to a blender and blend until smooth.
Pour the tomato puree into a large saucepan. Add onion, garlic, oregano, basil, salt, pepper, tomato paste and sugar.
Bring to a gentle simmer over medium heat. Cook 60–90 minutes, stirring occasionally, until the sauce has reduced and reached a thick pizza-sauce consistency.
Taste and adjust. Add another ½ teaspoon sugar if the tomatoes are still too acidic, or additional salt if needed.
Remove from heat and blend with an immersion blender until completely smooth, if desired.
Cool before using on pizza. Store refrigerated.
Nota
Don’t add all the extra sugar at once. Start with the 1 tsp—we want to balance the tomato acidity, not make the sauce sweet. 🍅🍕
