Cowboy Butter Chicken Linguine >> a Quick and Easy Dinner Re

1-2lbs chicken (I used thighs)
1 package linguine pasta
2tbsp olive oil
2tbsp butter
4 cloves garlic, minced
1 tbsp lemon juice
1 heaping tsp Dijon mustard
3/4 cup chicken broth
3/4 cup heavy cream
1 cup freshly grated Parmesan cheese
Fresh parsley, chopped (optional for garnish)
Spices for chicken to taste:
Salt
Pepper
Paprika
Red pepper flakes

cook linguine according to the package, save 1 cup pasta water
season chicken and cook over medium-high heat in butter and oil for 5-6 minutes each side or until fully cooked - remove
in the same pan, reduce heat and add more butter if needed and add garlic, sauté for 30 seconds or until fragrant - careful not to burn
stir in lemon juice, Dijon, and chicken broth scraping up the brown bits in the pan- simmer for 2 minutes
stir in heavy cream, simmer 2 minutes, add the Parmesan stirring thoroughly until melted and the sauce has thickened
cut the chicken into bite size pieces and toss into the sauce to coat the chicken
add the cooked and drained linguine to the pot and stir to coat
garnish with parsley
