2/3 CUP BARBECUE SAUCE

2/3 CUP TERIYAKI SAUCE

3 CLOVES GARLIC, MINCED

1 TBSP FRESH GRATED GINGER

2 LBS CHICKEN BREAST - CUT INTO 1 INCH CHUNKS

2 CUPS FRESH PINEAPPLE, CUT INTO PIECES

1 RED BELL PEPPER CUT INTO 1 ½" PIECES

1 SWEET ONION CUT INTO 1 ½/" PIECES

2 TBSP OLIVE OIL

SALT AND PEPPER TO TASTE

DIRECTIONS

1. IN A MEDIUM BOWL COMBINE BBQ SAUCE, TERIYAKI SAUCE, GARLIC AND GINGER. RESERVE ½ CUP AND SET ASIDE.

2. IN A GALLON ZIPLOCK BAG COMBINE SAUCE AND CHICKEN AND MARINATE FOR AT LEAST 2 HOURS, TURNING THE BAG OCCASIONALLY.

3. THREAD CHICKEN PIECES, PINEAPPLE, BELL PEPPER AND ONION ONTO SKEWERS. BRUSH WITH OLIVE OIL SEASON WITH SALT AND PEPPER.

4. PREHEAT GRILL TO MEDIUM HEAT

5. ADD SKEWERS TO GRILL AND COOK TURNING OCCASIONALLY UNTIL THE CHICKEN IS COOKED THROUGH OR ABOUT 10 MINUTES. BRUSH THE SKEWERS WITH RESERVED BBQ SAUCE AND COOK AN ADDITIONAL 1- 2 MINUTES.
