Carrot, Walnut, and Cinnamon Loaf with Orange Syrup

For the Loaf:
1 ½ cups (190g) all-purpose flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 tsp ground cinnamon
½ tsp ground nutmeg
½ cup (115g) unsalted butter, softened
¾ cup (150g) brown sugar, packed
2 large eggs
1 tsp vanilla extract
1 ½ cups grated carrots (about 3 medium carrots)
¾ cup chopped walnuts
For the Orange Syrup:
½ cup (120ml) fresh orange juice
½ cup (100g) granulated sugar
1 tbsp unsalted butter

Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
In a large bowl, cream softened butter and brown sugar until light and fluffy.
Beat in eggs one at a time, then stir in vanilla extract.
Fold in grated carrots and chopped walnuts.
Gradually add dry ingredients to the wet mixture, mixing until just combined.
Pour batter into the prepared loaf pan and smooth the top.
Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
While the loaf is baking, prepare the orange syrup: combine orange juice, granulated sugar, and butter in a small saucepan over medium heat.
Bring to a boil, then reduce heat and simmer for 8-10 minutes until slightly thickened.
When the loaf is out of the oven, poke holes in the surface using a skewer or toothpick and pour the warm orange syrup over the top. Allow it to soak in before slicing.
