Ingredients per 2 sandwiches (makes 2 sandwiches):
Lemongrass Chicken
10oz chicken thigh, boneless, skinless, raw
1 second spray oil
1/2 tbsp fish sauce
1 tbsp oyster sauce
1 tsp brown sugar
1 tbsp minced garlic
1 tbsp lemongrass
Carrot & Daikon Salad
2 medium carrot
1 cup daikon radish
1 tbsp sugar
1/4 tsp salt
1 ½ rice vinegar
1 tsp sesame oil
3 tbsp light mayonnaise
2 tsp sriracha
1/2 tbsp lime juice
2 tbsp jalapeno (de-seeded)
2 tbsp cilantro
2 x 5-inch long loaf of French baguette

How to make it yourself:
Dice your carrots & radish into thin strips and jalapeños into small slices
In a bowl, mix together your chicken, fish sauce, oyster sauce, brown sugar, minced garlic, and lemongrass and set aside to marinate
In a bowl, mix together your carrots and radish, sugar, salt, rice vinegar, and sesame oil and set aside to marinate to make your diakon and carrot salad
In a pan coated with spray oil on medium heat, cook your chicken on both sides until it develops a golden brown crust
Toast a 5 inch baguette loaf, add your chicken, cilantro, jalapeños, and carrot & daikon salad inside and top it off with a drizzle of sriracha, lime juice, and light mayo and enjoy!
