Creamy Garlic Parmesan Chicken & Potatoes

500 kcals per portion
41g PRO, 61g CHO, 16g FAT
500g of potato
2 tsp of aromatic seasoning
Salt/pepper
Oil spray
Broccoli/broccolini
200g of uncooked chicken breast
2 tsp of paprika
1 tsp of garlic powder
1 tbsp of olive oil
1 red onion, diced
2 cloves of garlic, minced
1 reduced salt chicken stock cube mixed with 200ml of boiling water
30g of light creme fraiche
Dash of cream
1 tsp of dijon mustard
Fresh parsley, chopped
4 tsp of parmesan
Salt/pepper

Wash the potatoes and slice into wedges. Par boil for 5 minutes. Season with aromat seasoning and pepper. Spray with oil and cook in the oven or air fry at 200°C for 20-25 mins until soft.
Boil the broccolini until tender.
Season the chicken breasts with paprika, garlic powder, salt and pepper.
Spray a pan with oil and add the chicken breasts. Cook on either side for 5-10 minutes. Remove from the pan and set aside.
On the same pan, add the garlic and red onion along with a dash of water. Fry until softened.
Pour in the chicken stock and add the creme fraiche along with a dash of cream (optional). Mix in the Dijon mustard. Add the chopped parsley. Season with salt/pepper. Let this simmer for 2 minutes.
Add back in the chicken and coat each side in the sauce. Simmer until the sauce thickens up. Sprinkle over 2 tsp of parmesan.
Serve the potatoes, broccolini, chicken and sauce into two portions. Top with another teaspoon of parmesan per portion.
