150g cut glass noodles (Dangmyeon)
1/4 carrot
1/4 white onion
1/4 capsicum (red + yellow)
oyster mushroom
wood ear mushroom
120g baby spinach
Sauce Mix:
1 tbsp cooking oil
1/2 tbsp minced garlic
150ml soy sauce
1 tbsp mirim (Rice wine)
1 tbsp dark brown sugar
1 tbsp corn syrup

soak the noodles for 20 minutes.
oil your pan and stir-fry the vegetables in order: carrots, onions, capsicums, and mushrooms, adding each at 30 second intervals.
season with a pinch of salt and pepper.
add the baby spinach, close the lid for 20 seconds, then give it a final toss and set it aside.
combine the sauce ingredients in a wok and add the soaked noodles.
stir then close the lid and let it simmer for 2-3 minutes.
add the set-aside vegetables back in, and stir-fry everything together for about 10-20 seconds. (Taste and add a pinch of salt if needed)
Finish with a generous drizzle of sesame oil and toasted sesame seeds.
