Creamy Beef, Tomato & Artichoke Pasta Skillet

1 lb ground beef
12 oz pasta, ideally penne, rotini, shells or macaroni
1½ to 2 cups artichoke hearts, chopped
1½ to 2 cups chopped tomatoes or 1 can diced tomatoes
½ cup sour cream
1 small onion, diced, optional
2 to 3 garlic cloves, minced, or 1 tsp garlic powder
1 tsp Italian seasoning
½ tsp paprika
Salt and pepper
Chili flakes, optional
Parmesan, optional
A tiny bit of Dijon Mustard, optional

Boil pasta in salted water. Cook until just barely tender because it will soften more in the sauce. Save about ½ cup pasta water before draining.
Brown the beef in a large pan over medium-high heat. Add onion if using. Cook for 5 to 7 minutes until browned. Drain some grease if there’s a lot.
Season it with garlic, Italian seasoning, paprika, salt, pepper and chili flakes if using.
Add tomatoes and artichokes. Cook for 4 to 5 minutes, letting the tomatoes soften and the artichokes warm through.
Lower the heat. Stir in the sour cream. Add a splash of pasta water if it gets too thick.
Add pasta and toss everything together for 1 to 2 minutes. Taste and adjust salt, pepper, sour cream or milk.
Nota
Important texture note
Do not boil the sour cream hard after adding it. Keep it on low heat or it can split and look grainy.
If the sauce is too thick you can add a splash of milk after mixing
