Basil & Scallion Oil Noodles

On the days when life feels overwhelming, you want to keep things simple with this ten minute bowl of soul-stirring aromatic noodles you can toss together in ten minutes. It’s fresh and vibrant, bursting with an intensity of herby flavours. Adjust the ingredients to your liking, full recipe below 👇

Cook noodles of choice according to packet instructions.

To a heatproof bowl add.

1/2 cup finely-chopped basil leaves

1/4 cup finely-chopped scallions

Handful of cilantro (coriander)

1 - 2.5 tbsp minced ginger

3-4 cloves of minced garlic

2-3 tsp gochugaru / chilli flakes

2-3 tsp sesame seeds

Adjust according to taste, eg adding more 🌶️ for spice or garlic if you like!)

Arahan

Heat 2 tbsp of neutral-flavoured oil + 2 tbsp of sesame oil (or you could just heat 3-4 tbsp of a neutral-flavoured oil of choice)

Pour it over the herby mixture. Let it sizzle then pour in:

1.5 tbsp light soy sauce

1.5 tbsp dark soy sauce

1-1.5 tbsp (veg) oyster sauce is optional but always a good idea

Juice or a lemon
