Chicken & Sweet Potato Power Bowl W/ Creamy Garlic Sauce

1 lb chicken breast or thighs, cut into bite-sized chunks

1 tbsp olive oil

1 garlic clove, minced

1 tsp dried oregano

½ tsp paprika

Juice of ½ lemon

2 cups sweet potatoes, peeled + cubed

2 cups cooked brown rice

3–4 cups chopped kale or mixed greens

Creamy Garlic Sauce

½ cup plain Greek yogurt or dairy-free yogurt

1 tbsp olive oil or avocado oil mayo

1 garlic clove, minced

1 tbsp lemon juice

1 tsp Dijon mustard

1–2 tbsp water to thin

Sea salt + pepper

How to Make It

Preheat oven to 400°F. Toss sweet potato cubes with olive oil, salt + pepper. Roast 20–25 minutes until golden and lightly crisp.

Season chicken with garlic, oregano, paprika, salt, pepper, and lemon juice.

Heat a skillet with 1 tbsp olive oil. Sear chicken 4–6 minutes per side until browned and cooked through.

Whisk together all sauce ingredients until smooth and pourable.

Build your bowl just like the photo: a base of brown rice and kale, roasted sweet potatoes on one side, seared chicken on the other, and a generous drizzle of creamy garlic sauce over top.
