Tomato Rice With Roast Veg

280g long grain white rice

60g tomato purée

70g sundried tomato paste

950ml water (newly boiled)

1 tsp paprika powder

1 tsp sea salt

1/2 level tsp of cayenne pepper

For the marinade:

800g big ripe tomatoes, cut into chunky pieces

1 medium onion, cut into chunky 6ths

5 garlic cloves, large + skins on

2 tbsp capers

25g butter

4 tbsp olive oil

Arahan

Preheat the oven to 200c degrees.

Start on veggies. Add the tomatoes, onions, garlic, capers, butter, olive oil to a deeper baking dish + season with salt + pepper. Mix together + place in the oven for about 1hr or until golden + bubbling.

While that roasts, grease a 30cm by 22cm baking tray with a spoon of oil. Soak rice in the cold water for 1 min and drain. Pour rice into a tray and layout evenly.

In a saucepan, add the paprika, cayenne, salt, purée + water. Mix + pour over the rice.

Cover rice with tin foil or a lid. Place into the oven for 20 minutes and then remove the foil. Roast for another 15 minutes. Serve with a lemony green salad, roast veg on top.
