Parmesan Zucchini Chips with Garlic Dip

1 medium zucchini / courgette

2 tbsp extra virgin olive oil

1/4 tsp salt

1/4 tsp black pepper

2 tsp oregano

1 tsp smoked paprika

1 tsp garlic powder

1/3 cup grated parmesan cheese

2 tbsp mayonnaise

1/4 cup heavy / double cream

1 clove garlic, finely chopped

1 tbsp fresh dill, finely chopped

Preheat your oven to 425°F (220°C) and line a baking tray with parchment paper.

Slice the zucchini into very thin rounds (use a sharp knife or mandoline) and transfer them to a mixing bowl. Thinner rounds will result in more crispy zucchini chips.

Add the olive oil, salt, black pepper, oregano, smoked paprika, and garlic powder to the bowl and toss until the zucchini slices are evenly coated.

Arrange the zucchini rounds in a single layer on the prepared baking tray and sprinkle the parmesan cheese over the top.

Bake for 12-15 minutes, until the zucchini chips are golden brown and crispy.

While the zucchini chips are baking, make the garlic dip by combining the mayonnaise, heavy cream, garlic, dill, and salt in a small bowl.

Once the zucchini chips are done, remove them from the oven and let them cool for a few minutes.

Serve the crispy parmesan zucchini chips with garlic dip. Enjoy!
