Lemon Herb Greek Meatballs with Homemade Tzatziki

1lb extra lean (96/4) ground beef

2 tbsp chopped dill

1/2 cup panko

1/4 a red onion

1 tsp olive oil

1 egg

3 minced garlic cloves

juice from 1/2 lemon (1 tbsp)

garlic powder

onion powder

1 tsp oregano

1 tsp paprika

1/4 tsp dried basil

salt & pepper

roll into 1 inch sized meatballs (makes ~20)

sear on medium heat for 2-3 mins on each side

bake at 400 for 10 mins (until internal temp reaches 165)

2 sliced mini cucumbers

3/4 cup chopped cherry tomatoes

1/4 a red onion

1 roasted red pepper

1 tbsp red wine vinegar

1 tsp dill

1 tsp basil

1/4 tsp oregano

salt & pepper

1 peeled & grated cucumber (water drained)

1/4 cup chopped dill

juice from 1/2 lemon

1 tbsp red wine vinegar

cook 2/3 cup pearl couscous according to package instructions

after cooking, stir in 1 tbsp lemon juice, 1 tsp chopped basil, salt, pepper, and garlic powder to taste

Makes 2 servings)

Assemble:

Add 1 serving tzatziki, beef meatballs, Greek salad, & couscous to a plate. Garnish with dill & serve🥗
