Wine & Dip Episode 1: Hot Gouda & Bacon Dip + Bordeaux Blend

8oz block full fat cream cheese

1/2 cup full fat sour cream

1/2 cup cooked smokey bacon, chopped

2-3 stalks of green onions, chopped

1-2 cups of aged Gouda, shredded

1/2 lemon, juiced

freshly ground black pepper

Arahan

Mix all ingredients in a bowl, save some cheese for the topping. You can also mix directly in a baking dish if you’re as lazy as me.

Bake at 375 F for ~15-20 minutes (until hot and bubbly). Remove from oven, top with more cheese and broil on high for approx 2-3 minutes (or until golden and bubbly).

Let it cool a bit so you don’t burn your tongue like I did!! Serve with fresh, soft and flaky French bread 🥖

Why the pairing works🌟

Both are rich and complex, so neither should overpowers the other

The smokey bacon plays with the cedar and burnt wood flavours of the wine, and the green onions play with the herbaceous notes from the Cab Sauv, Can Franc, and Petit Verdot in the Bordeaux blend!

The fat from, well, everything (😅) softens the grippy, mouth drying tannins in the wine

The saltiness amps up the ripe fruit flavours of the wine
