Breastfeeding Muffins

¾ c milk

½ c real maple syrup

1 egg

1 tablespoon canola or veg. oil

1/3 c grated carrots*

1/3 c grated apple*

1/3c grated zucchini*

1/2 c wheat germ or wheat bran

¾ c whole wheat flour

3 tablespoons sugar

1 tsp baking soda

1 tsp baking powder

½ tsp salt

½ tablespoon cinnamon

½ c raisins

Arahan

Oven to 375, yields 12 muffins

Beat first 4 ingredients until smooth, stir in grated veg/fruit, in separate bowl combine dry ingredients except raisin, add to wet ingredient mix just until incorporated, fold in raisins, spoon into 12 muffin cups and bake 18-20 minutes.

*if you don’t have all of these on hand a full cup of one of them could be substituted for all, though then you don’t get the varied nutrition.

Nota

This is worth doubling or tripling when you make it so you can freeze some.  You can also use a food processor to grind the carrots, apples, and zucchini if you don’t feel like grating them all.
