Roasted Fresh Tomato Cream Sauce with Gnocchi 🍅

2 lbs gnocchi
Tomatoes — about 5–6 lbs (all those gorgeous tomatoes you roasted)
1 large yellow onion
1 whole head garlic
2 tbsp olive oil
1 tsp Italian seasoning
1 tsp salt, plus more to taste
½ tsp black pepper
1 cup heavy cream
½ cup grated Parmesan cheese
½ tsp red pepper flakes (optional)
Fresh basil — about ½ cup (optional, but really good)
Sugar — 1tsp to start and add to taste

1. Roast the vegetables:
Preheat oven to 425°F. Place the halved tomatoes, onion, and garlic on a large baking sheet. Drizzle with olive oil and sprinkle with Italian seasoning, salt, pepper, and red pepper flakes. Roast for 35–45 minutes, until the tomatoes are very soft and beginning to caramelize.
2. Blend:
Remove the roasted garlic from its skins. Transfer the roasted tomatoes, onion, and garlic to a blender or food processor. Blend until smooth.
3. Make it creamy:
Pour the tomato mixture into a large pot. Stir in the heavy cream and bring to a gentle simmer. Stir in Parmesan until melted and smooth. Taste and adjust salt and pepper.
4. Cook the gnocchi:
Cook 2 lbs gnocchi according to the package directions. Drain, reserving about 1 cup of the pasta water.
5. Combine:
Add the gnocchi to the tomato cream sauce. Stir gently to coat. Add a little reserved pasta water if the sauce needs thinning.
6. Finish:
Stir in fresh basil and/or extra Parmesan. Serve hot.

Notes:
The exact tomato weight doesn’t have to be perfect — you had a lot of tomatoes, and this is a great way to use them. 🍅❤️
