Miso Chocolate Chip Cookies

9 tbsp unsalted butter
1¾ cups all-purpose flour
½ tsp baking soda
½ tsp baking powder
¼ tsp salt
⅓ cup granulated sugar
½ cup packed light brown sugar
1 large egg (room temp)
1½ tsp vanilla extract
2½ tbsp white miso paste
4 oz chopped semi-sweet or dark chocolate bar
Flaky sea salt (optional)

Preheat oven to 350°F. Line baking sheets with parchment paper.
In a saucepan, melt butter over medium heat. Stir until golden brown and nutty (5–6 mins). Cool 15 mins.
In a bowl, whisk flour, baking soda, baking powder, and salt.
In a large bowl, beat browned butter, granulated sugar, and brown sugar until smooth.
Mix in egg, vanilla, and miso paste until well combined.
Slowly add dry ingredients. Mix until just combined.
Fold in chocolate.
Scoop 2 tbsp dough balls onto baking sheet, 2 inches apart. Sprinkle with flaky salt (optional).
Bake for 10 mins, until edges are golden.
Cool 5 mins on pan, then transfer to rack.
