Olive and Feta Burgers

1 pound 90% lean ground beef

½ cup crumbled feta cheese

½ cup pitted Kalamata olives, chopped

1 garlic clove, minced

1 large egg, beaten

¼ cup Homemade Bread

Crumbs (page 192) or store-bought unseasoned

bread crumbs

¼ teaspoon freshly ground

black pepper

2 tablespoons olive oil

Arahan

1. In a large bowl, combine the ground beef, feta, olives, garlic, egg, bread crumbs, and pepper.

2. Use clean hands to evenly divide the mixture into 4 burger patties.

3. In a large skillet or grill pan over medium-high heat, heat the olive oil. When the oil is shimmering, add the patties and cook for 3 to 5 minutes on each side, until browned and cooked through.

Nota

Tip : For burgers, meatloaf, and meatball recipes, stick with 90% lean ground beef. You need some fat to keep these babies moist!

I like getting creative with my burgers. some days I feel like Mexican flavors, so I'll top them with avocado and salsa, while other days. I make these Mediterranean-style bad boys with olives and feta cheese, and top them with my Tahini Yogurt Sauce (page 186)
