For this recipe, you’ll need:
2 cups rice
2 cups of water (for the rice)
1 tsp dashi powder
1 tsp soy sauce
1 bunch oyster mushrooms, cut
1 bunch enoki mushrooms, cut
1 bunch shimeji mushrooms, cut
1 cup corn (canned or frozen)
1 tsp butter (or small square)
sprinkle of green onions
1 tsp sesame oil (optional)
Arahan
In a rice cooker or stove pot, add in WASHED rice (wash and rinse twice until water runs clear) and water.
Add in dashi powder, soy sauce, and give it a quick stir.
Top the rice with mushrooms and corn. Turn on the rice cooker if using one. If using a stove pot, bring mixture to a boil on medium high eat, and then immediately cover, and bring down heat to simmer. Simmer for 15-20 minutes or until all the water is absorbed. Turn off the heat and let it sit with the lid closed for another 5 minutes.
Add in the butter and mix to combine. Add a sprinkle of green onions and sesame oil and it’s ready to serve!
