Simple Brothy Beans with Miso Butter Sautéed Leeks

Bahan-bahan

700g Borlotti beans, drained and rinsed

1 shallot

4 cloves of garlic

1 bay leaf

1/2 a veg or chicken stock cube

450ml water

1 heaped tbsp unsalted butter

1 heaped tsp white miso paste

1 large leek

1/2 a lemon

Fresh chopped chives and black pepper to serve

Arahan

Dice the shallot and fry in olive oil for 3 minutes before adding in the minced garlic. Fry for another few minutes and then add in your drained and rinsed borlotti beans. Go in with the bay leaf stock cube and water. Let this simmer away gently whilst you crack on with the leeks.

Slice the leeks thinly and fry in olive oil for 5-7 minutes until softened. Beat together butter and miso paste and then add this in too along with a big squeeze of lemon. Cook it all out for another minute and serve. Ladel the brothy beans into a bowl and then top with the leeks. Finish with chives and black pepper
